Would 200 mile mark be ok to dyno a new bike or should I wait till the 500 to 600 mile mark or longer?

As long as the bike is warmed up properly, it will be fine. We put bikes with freshly-built motors - 0 miles - on the dyno all the time. The first hour or so on the dyno is all steady-state and cruise mapping, anyway. The final hp pulls happen at the end . . .

I guess I should have stated that I'll be setting the PC5 with the Dyno and not just breaking in the bike.

Have you looked into the ECU Editor? You can save yourself the expense of a PC and have much more control over your engine by using the editor.
