as long as you can regulate the pressure down far enough for the shifter it'll work. All you would have to get is a regualr co2 shifter kit but without the bottle. Then get a Y split from the bottle and run your separate lines.
 
With that kind of pressure drop through the regulator to the air shifter, you will cause a huge temperature drop and freeze the shifter into oblivion in short order. It would be a lot better for the longevity of your shifter to get a separate tank, or use a compressor setup.
 
Another option is to run a quick shifter or an electric shifter instead of the air shifter.

Just my opinion, but I strongly favor on board compressors. The $15 pumps from Autozone weigh only two ounces, and have never failed for me or any that I have installed in 15 years. Not once. I watch these 3 guys who race with nitrous powered shifters constantly swearing about mysterious missed shifts, with frost dripping off the shifter. Hmmm. That and the regulator to bring the 1000 psi down to 100 psi is expensive. The guys running CO2 love there systems right up to the time they run out of CO2, or they spring a small leak. Keep is simple.
 
I ran a co2 system for a season and just changed out to a compressor setup. I dont regret it. Nice thing is, if you get a leak, you just let the compressor do its job. With CO2 you're outta luck if you get a leak. It will still run, but eventually will bleed out.

My CO2 system worked great, no complaints. But, I liked not having to refill. Its kind of like the nitrous vs turbo debate.

As far as running on nitrous, just make sure you use an expansion chamber and a regulator. As well as make sure you have enough bottle.

For a track bike, to me there is no major problem with running off nitrous with the right parts.

Mine is setup to run on a compressor, but I can switch back to my CO2 setup in less than a minute if I lose a compressor.
