Man that looks good. You are planning on bringing some with you to the Spring Bash aren't you?

What is your favorite food to cook with it or do you just enjoy it with a box of crackers and bottle of wine?

If you weren't in Maine I'd say for sure that's one heck of a redneck smoker :)

What's with the ladder and other thing up top? Interesting apparatus.

Cheese looks great. That and some summer sausage.....mmmmm

To smoke cheese it can't be over direct heat,lol.. it can handle smoke, be like nacho cheese if put directly on grill..

I've smoked eggs(boiled), peanuts, turkey, chicken, ribs, shrimp, cheese, sausage, hamburger. The trick to smoking cheese is cold smoke, after 2 to 3 hours, you put the cheese in a sealed bag and put in the frig. for a couple days. The smoke sinks into the cheese, the flavor is thru and thru. Smoked Boiled eggs are done around the holidays, mix chopped eggs with chopped ham and mayo. Some good stuff. I also make home brew, thinking about smoking some of the grain, make a smoke flavored porter or stout.
