I am wondering how my suspension should be set up. Currently its pretty soft so when I am launching the bike is dropping quite a bit is this correct or should I stiffing it up some?

If you are running a stock spring and shock on the bike in your post, you need to do some work on it. It needs to be revalved and a stiffer spring installed to launch correctly. The ratio is not stock anymore.
I got mine from Greg at Hyperbike. Which is one of sponsors. If you call Greg and give him all of your info he will special order the correct spring. I was bottoming out on my 7" over swingarm and he took care of it. His # is 301-473-9191. Greg is great to deal with also. I live about an hour from his shop. Nice people.
You have too much leverage with the stock spring. You will need to get one for your weight and length swingarm. You should start with a spring and you should send your shock away to get revalved. But you should do at least a spring.
Ok so the other night I went to the track and drained my tank ran with the reserve light on, removed the seat, 12lbs of air in the Shinko 003U. Ran consistent 6.5's, one red light, and a 6.7 with lots of wheel spin, Final run was a 6.42 so overall not a bad night.
