Thermostat valve

My mechanic says he just removes the thermostat valve for most superbikes he services ; his rationale : coolant will circulate all the time hence it will run a lot cooler . I thought it already does circulate anll the time and only the fan comes on when needed . Which is correct ?
 
I think it's more about how and where you ride. Without the thermostat there is no way to control how hot or cold your bike will run. In cooler temps the bike may not get upto normal range and the same for hot weather. Without the thermostat the coolant may not have enough time in the radiator to cool it down and cause the bike to run hotter. I'm just guessing on what I've read but if it wasn't needed I don't think they would have put one in. LOL
