for the wind get a Double Bubble windscreen, Zero Gravity or Puig
for comfort #1 pick is a Tobin seat, period; then new foot pegs or if you can spend the $$ adjustable rearsets like mentiond above.
**also** adjust your hand-controls (brake/clutch levers) so that your wrists arent bent at funny angles to reach the levers, that will relieve alot of pressure, along with gel grips (foam is ghey n wears out quickly) and well-padded gloves.
6'3" here. As stated, for seeing the instruments you'll need a double bubble windscreen and install afteremarket pegs like GP pegs. Beyond mods you just need some muscle in your back, abs, shoulders and arms to alleviate the weight on your wrists. FYI, I'm very comfortable with stock seat, seat height and handlebar position.
1. Buell pegs! If you did nothing else this is the place to start. Alternatively you can get adjustable pegs from GSG or full adjustable rearsets from a a variety of places.

5. Some form of throttle lock/cruise control. I use a throttle rocker and I have a set of Throttlemeisters but I no longer use them. Still searching for the perfect solution myself.
I'm 6'8". You really don't want to lower your sitting position. It will scrunch up your knees. I ground down the stock foot peg rubber until the "nubs" were gone. The best mod I did was get a Zero Gravity Sport touring windscreen. The double bubble windscreen looks better but didn't raise the wind blast up enough for comfort.

i will not lower my seat etc i need more leg space... lowering the seat will make it back to sq one.
