Running a taller tire will decrease your gear ratio, so to speak.
It will have the same effect as a larger front sprocket or smaller rear sprocket.
Most people will run a 17/42 or 16/42 sprocket combo for increased acceleration.
I could tell with the 17/41 combo and 190/55 rear, my overall gearing was less than the 17/40 combo running a 190/50.
