why is there 3 head gaskets?

I just pulled my head off because of shooting 70hp shot of N2O on my stock engine and I noticed there are 3 head gaskets. Why is this and if i only use one when I put it back together How much hp do you think I might gain?
 
Oh well thanks guys. Did not know the three was accually one. I did not see any rivets.
I think I may go with a thinner one after the build to squeeze a little more out of her.
 
Talk with engine specialists here on this site before you do that. Want to make sure it will work out for you......
 
A thinner head gasket will increase your compression but it will also retard your timing. You may need to do some cam adjustment.

It sounds like a great mod. All literbikes have higher compression than us. It doesn't take much reduction in gasket thickness to dramatically increase compression. The only thing that gives me pause is why do we not here of more people bumping up there compression?
