.............especially when there's almost an increase of 70 ft lbs of torque at 3000 RPM.........and it peaks at a little over 6000 rpm....then starts to drop like a stone

Somehow that torque chart is from another engine.....maybe it got mixed up....those values aren't from an in line 4 engine as I've never seen a dyno chart like that for an in line 4.

Well firstly the stock graph shows the engine running ridiculously lean, then ridiculously rich so the power is going to be way off. So whatever map that is is not right.

Yes, I have the Map as Berlin Germany ............. poop .. that bike changed to a Rocket ......... the torque is now like a Turbo in very low RPM..
I love it ............... But the rear tire wear went up realy high .................................
